Makes 4 portions
Annabel Karmel’s children love of pasta with tomato sauce made her try and sneak in some extra veggies which she puree into the sauce. And to give it even more flavour some mascarpone can be stirred in it.
PREP: 10 MINS
COOK: 15 MINS
1 tbsp olive oil
1 onion, peeled and chopped
30g carrot, diced
30g courgette, diced
20g celery, diced
1 clove garlic, crushed
1 x 400g can chopped tomatoes
½ tsp mixed dried herbs
1 tbsp sundried tomato paste
1 tsp soft light brown sugar
2 tbsp fresh chopped basil leaves
Salt and freshly ground black pepper
Approx. 200 g Hello Kitty pasta
STEP ONE Heat the olive oil in a saucepan. Add the onion, carrot, courgette and celery and sauté for about 4 minutes or until softened.
STEP TWO Add the garlic and sauté for 30 seconds.
STEP THREE Add the chopped tomatoes, herbs, sundried tomato paste and brown sugar. Bring to the boil, cover and simmer for about 10 minutes.
STEP FOUR Meanwhile cook the Hello Kitty pasta according to the packet instructions and drain.
STEP FIVE Allow the sauce to cool down a little, then blend and stir in the mascarpone and chopped basil leaves and season to taste.
